Chicory
A member of the Asteraceae/Compositae family, Chicory is known scientifically as Cichorium intybus. Either during the flowering season or autumn, the whole Chicory plant is collected for use, however, the dried leaves and roots are used for production. Chicory contains sesquiterpenes, caffeic acid derivatives, hydroxycoumarins, flavonoids, and polyynes. Chicory is rich in beta carotenes.
Chicory has been used for the loss of apetite as well as dyspeptic complaints. It also has a mild laxative effect and stimulates bile prodution due to the bitter taste. Chicory is used in food and beverages.
