Peptidase

Peptidase, also proteolytic enzyme or protease, is an enzyme that breaks the peptide bonds of proteins. The process is called proteolytic cleavage. Peptidase uses a molecule of water for this and are thus classified as hydrolases. During the break down, the proteins are split into smaller peptide bits and amino acids.
