Gum Arabic
Gum Arabic (Acacica senegal) is a substance from two sub-Saharan species of the Acacia tree. The gum is produced by the tree when resealing bark in the event of damage. Gum arabic is a complex mixture of saccharides and glycoproteins, which gives it one of its most useful properties: it is perfectly edible. Gum arabic is used in the preparation of emulsions and in cough drops. It has a mild stimulant effect and the ability to impede absorption. Gum arabic is a natural stabilizer in baking and cooking.
