Red Yeast Rice (Monascus purpureus) is native to China. It???s been used in Asian traditional medical systems since approximately 800 A.D. Produced by fermenting red yeast with white rice, Red Yeast Rice is commonly used in cooking applications to enhance the color and flavor of foods. Peking Duck is an example of the coloration and flavor imparted by Red Yeast Rice. Red Yeast Rice contains ten mevinic acidsm also known as monacolins, the highest concentration made up of lovastatin; sterols (beta-sitosterol, campesterol, stigmasterol; sapogenin; isoflavones and isoflavone glycosides; and monounsaturated fatty acids. Red Yeast Rice is commonly used for maintaining desirable cholesterol levels or reducing cholesterol levels; for indigestion, imrpoving blood circulation, to support spleen and stomach health.
