Sorbic Acid
Sorbic Acid is a polyunsaturated fat. It is often used as a preservative. Sorbic acid is used to inhibit molds, yeasts, and fungi in many foods, such as cheese, wine, and baked goods. It reacts with potassium to make potassium sorbate and with calcium to make calcium sorbate, which are also used as anti-fungals.
