Centaury is also known as the Bitter Herb for the taste. Centuary is scientifically classified in the Gentianaceae family and is referred to as Centaurium erythraea. Centaury is used for the flowering tops which are harvested and quickly dried to preserve the flower color, which can range from purple to pink-red. The bitter constituents of Centuary are amarogentin, gentiopicroside, and swertiamarin.
Centaury increases gastric secretion and salivation due to the bitter taste. The herb is commonly used for dyspeptic complaints, loss of apetite, and poor gastric secretion. Traditionally, it has also been used for fever and kidney stones. Externally, Centuary is used for wound treatment.
