Tomato (Lycopersicon esculentum) originated in southern or Central America. Today, it is only cultivated. The fruit, leaf, and vine can all be used medicinally. Tomatoes are the major dietary source of carotenoid, lycopene. Actually, lycopene is better absorbed from tomatoproducts, such as pastes, than from the fresh tomatoes. Tomato juice is also beneficial to the body and increases serum lycopene levels. Tomato products are being reserach for immune stimulating functions.
