Curcuminoids
Curcuminoids are polyphenolic pigments found in the spice turmeric. The major curcuminoids are curcumin, demethoxycurcumin and bisdemethoxycurcumin. Curcuminoids are responsible for the yellow color of turmeric, as well as the yellow color of curry; it often used in mustards, cheeses, and other foods. Curcuminoids have demonstrated antioxidant effects. They also have anticarcinogenic, anti-inflammatory, antiviral and hypocholesterolemic activities.
